脂肪酸分析用標準品

脂肪酸は構造の違いにより「飽和脂肪酸」と「不飽和脂肪酸」の2種類に分類されます。炭素-炭素間に二重結合がある脂肪酸を不飽和脂肪酸といい、その中でもトランス型二重結合を持った不飽和脂肪酸はトランス脂肪酸と総称されます。トランス脂肪酸はマーガリンやショートニングなどの硬化処理された油脂とそれらを含む食品などに含まれており、トランス脂肪酸の摂取は血中の悪玉コレステロールの増加、心疾患のリスクを高めることが報告されています。消費者庁は平成23年2月21日に「トランス脂肪酸の情報開示に関する指針について」を発出し、食品事業者がトランス脂肪酸に関する情報開示を行う際の考え方を明示しました。今後、食品中に含まれる脂肪酸の分析法の確立が必須となり、脂肪酸の標準品が不可欠となります。
